Rassolnik (Dill Pickle Soup) is a traditional Slavic soup, deriving its name from the main ingredient, dill pickles (“rassol” is a pickling brine which is also used in the soup). Slightly tangy and tart, Rassolnik is refreshing and nutritious. Besides the dill pickles and the brine, the ingredients for the Rassolnik include rice (some versions call for pearl barley), potatoes, carrots, onion, herbs, bay leaf, and seasoning.
Gala’s Rassolnik Soup is super easy and quick to prepare. Rice and potatoes have been precooked for your convenience, then dehydrated along with other ingredients, and vacuum-packed to preserve freshness and nutrition. To make this soup extra delicious, we use the Bubbies Kosher Dill Pickles, which, in our opinion, are the best pickles ever made. If you haven’t tried them, you haven’t had a good pickle 🙂 We are quite proud to make the Bubbies pickles and their brine a part of our Dill Pickle Soup. To cook the soup, add the mix to 2-3 quarts of cold water, bring to boil, and cook for 15-20 minutes, stirring occasionally. Remove from heat and let the soup sit for 15-20 minutes to blend the flavors. Serve with a dollop of sour cream.
